Carrot Cake Energy Bites

These Carrot Cake Energy Bites are made without refined sugar, using naturally sweet dates. Rolled oats, nuts, and shredded carrots provide fiber and healthy fats in every bite. Keep a batch in the refrigerator for an afternoon pick-me-up or a healthy snack when you need an energy boost.

Ingredients20 energy balls

  • 2 cups rolled oats
  • 1 cup shredded carrots (about 2 medium carrots)
  • 1 cup pitted dates
  • 1/2 cup pecans or walnuts
  • 1/4 cup plain Greek yogurt
  • 1 Tbsp cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp salt

Directions

Shred carrots. Using a clean towel, squeeze as much excess moisture from them as possible.

In food processor, pulse oats, dates, and nuts until finely chopped. Add carrot, yogurt, cinnamon, ginger, and salt then pulse until mixture holds together when pressed.

Roll into 20 bite-sized balls. Store in refrigerator until ready to eat.
